Bisto is a disgusting anhydrous concoction utilised by feckless, lazy working and lower middle classes of our society to provide “gravy” as an accompaniment for roasts.

The correct method for gravy utilises the vegetable stocks, meat juices and fats from the cooking processes with the simple addition of a little flour. Skilful blending should be done under gentle heat to produce the desired consistency.A good wanking hand from a vigorous adolescence will aid the melangement.

I made an excellent pheasant gravy on Sunday and added some purée des pommes which had been flambéed in Calvados.
